How to Saute Mushrooms

I have always enjoyed sautéed mushrooms. I won’t eat a raw mushroom to save my life, but there is no topping, in my opinion, better for a burger, chicken, steak or salad than a perfectly sautéed mushroom. Even though it drives my husband crazy, I will sometimes just order a salad with a side of sautéed mushrooms when we go to nice steak restaurant for dinner since they typically have the BEST sautéed mushrooms!

I know everyone does this a little differently, but here is how I sauté mushrooms…

First of all, Costco has the best mushrooms when you are looking for just plain white mushrooms, not the gourmet ones. They are big, fat and delicious! No…we do not get a kickback every time we mention the word “Costco”,  we just both really believe in their products. Anyway, clean the mushrooms  (video to clean and sauté here) and  slice into thick even slices, or quarter them, whichever you prefer. Add the mushrooms to a large skillet of melted butter and olive oil, about 1-2 T. each depending on how many mushrooms you are cooking.

Sauting Mushrooms

Saute the mushrooms on medium heat, stirring occasionally until desired doneness. Sprinkle salt and pepper to taste. It is important to save the salt for the end of the cooking process or you will draw out all the moisture from the mushroom and will have way too much liquid in your sauté pan.

Even though I don’t like raw mushrooms, I also don’t like them very squishy and mushy. Hot and “just cooked” is my personal preference, so this takes about 5-7 minutes.

Sauted Mushrooms

 

Take them out with a slotted spoon to make sure you don’t get any of the liquid. Serve over your favorite meat or salad!!
