Day 3 of a week of meals from your well stocked kitchen

I will be honest. Day 3 did not go as planned. I barely slept due to having a child with a nagging cough. Once his medicine finally kicked in, I was still wide awake and ended up getting a total of about 4 hours of sleep. Needless to say, I decided to “sleep in” until about 5:45. I won’t bore you with the details of the morning, but I will say that I got everyone off to school with a “basic” breakfast (bagels and fruit) and a relatively healthy lunch. Soup for the child with the cough and a peanut butter sandwich as the main course for the other one. I supplemented with fruit and a few other things. I wasn’t too worried about them being hungry because I was convinced that the school would be dismissing the kids early due to the impending snow storm. Yes…I was obsessed with this most of the morning. When it comes to snow, I’m as much of a kid as the kids are!

Being the planner that I am, I did go ahead and hit the liquor store to get 2 bottles of red wine. It just made sense since we were facing winter weather and technically this is not against the rules of going to the store this week!! Anyway, fast forward a couple of hours and school was indeed let out early. Anyone who lives in the Atlanta area knows what nightmare followed. I was fortunate enough to have been able to have gotten my kids from school in just 2 short hours….much better than many of my fellow Atlantans, some who are STILL not home. 

We started shoveling the driveway, got our gear on and hit the hills for some sledding. As we were waiting for my husband to come home, I poured my first (yes first) glass of red wine. After all, I deserved it after the white knuckled commute I had. Neighbors came and went. I put out some cheese and crackers and realized I had forgotten to each lunch. Suddenly it was 6:30 and dinner was not prepared. My husband had a bit of a headache so comfort food was requested! Hmmm…..Spaghetti and meatballs! It took all of about 15 minutes to prepare. I poured another glass and everyone was happy. 

We decided to wait to make snow cream for the next day. Maybe we will have that breakfast!!

Day 3: A stressful success!!!
