Grilled Green Tomatoes Caprese Salad

Last summer, we remodeled our deck and added a great outdoor entertaining area. Once it was done, we had a little party (of course). I wanted to use our new grill as much as possible, including wanting a great idea for a grilled salad. I was thumbing through a bunch of recipes and found this Grilled Green Tomatoes Caprese Salad from Food Lion Magazine (Summer Grilling Edition). I added some yellow tomatoes for color, but other than that, I kept the recipe the same.
Level of Difficulty: Easy
Time Required: Prep Time – 5 min plus one hour to marinate; Cook Time – 10 minutes
Ingredients:
1/2 c. olive oil
1/4 c. white balsamic vinegar
2-3 garlic cloves, minced
1 T. brown sugar
1/8 tsp. salt
2 medium size green tomatoes, cut into 1/4 in. thick slices
2 medium size yellow tomatoes, cut into 1/4 in. thick clices
1 16 oz. package sliced fresh mozzarella cheese (you can find it at Costco)
Kosher salt
Fresh ground pepper
1/3 c. thinly sliced fresh basil (see how to chop basil)
Preparing Grilled Green Tomatoes Caprese Salad:
Combine the first 5 ingredients in a large plastic zipper freezer bag; add tomatoes, seal and shake gently to coat. Chill for one hour in refrigerator. Preheat the grill to medium-high heat. Remove tomatoes from bag, reserving the marinade. Grill the tomatoes, covered with grill lid about 3-4 minutes per side until grill marks appear. Arrange alternating slices of warm tomatoes and mozzarella cheese on a large, shallow platter. Drizzle with reserved marinade. Season with kosher salt and pepper to taste. Sprinkle basil for color!

Important Tips:
Please do no throw in red tomatoes for color. They are too watery and will fall apart on the grill. Orange tomatoes are fine, just more expensive!

I made these last night. Delicious!!!! We are having a problem with our tomatoes turning red, thus I have an abundance of large green tomatoes. I had made oven baked “fried green” tomatoes numerous times already and wanted something different. Came across this and had to try it. Might I say that these tomatoes are even better cold the next day! Caramelized and tart with that grilled flavor. My new fave!
