Balsamic-Garlic Chicken Breasts

Balsamic-Garlic Chicken Breasts are an easy way to make chicken. The sauce isn’t difficult to make and it really adds great flavor to your chicken. I found this in the July 2010 edition of Southern Living….if you don’t already subscribe to this magazine, you really should. Fabulous recipes!!!
Level of Difficulty: Easy
Time Required: Prep Time – 5 min; Cook Time – 25 minutes
Ingredients:
4 (6 oz). boneless skinless chicken breasts, pounded to equal thickness
1 tsp. salt
1 tsp. pepper
2 T. butter
1 T. vegetable oil
1/2 c. chicken broth
1/4 c. balsamic vinegar
1 T. fresh lemon juice
3 garlic cloves
1 1/2 tsp. honey
Special Equipment and Other Items Needed:
Large skillet
Preparing the Balsamic-Garlic Chicken Breasts:
Sprinkle chicken breasts with salt and pepper.
Melt butter with oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes on each side, or until done. Remove chicken and keep warm.
Add chicken broth and next 4 ingredients to skillet. Cook for 5 minutes or until slightly thickened, stirring to loosen particles from bottom of the skillet. Serve chicken with sauce.
Important Tips:
Don’t forget to pound your chicken before you season it for even cooking!

Serve with steamed broccoli and orzo with pesto for a complete, delicious meal!
