Day 5 of a week of meals from your well stocked kitchen
Day 5 of a week of meals from your well stocked kitchen was also day two of being snowed in. Bonus pajama day for us! I started with biscuits, scrambled eggs and sausage for 2 out of 3 members of the family. The other one just wanted a plain bagel. I still need not much more than my perfect cup of coffee to start my day…ok…pot of coffee!!!
Since the temperature was above freezing, why not grill, right? I decided to make grilled Naan pizza for lunch. Pepperoni for the boring palates and goat cheese, spinach and Canadian bacon for the sophisticated one!!!! Grilling with snow on the ground was a first for me, but since our deck is covered, it wasn’t too bad. This was definitely something the kids would not have gotten if they were at school! Here’s to trying to make the snow days fun!
Since we had found out that today was also going to be a snow day from school, both kids had friends sleep over. I was determined to keep my promise and NOT go to the store and still put a healthy meal on the table. I made spicy roasted chicken, brown rice, salad and green beans for dinner last night.
Store update: I am out of eggs and out of wine. I should go to the store today, but I’m not sure if that’s really going to happen. We will see how far I can make our food stretch!!
