
So…you have lots of leftover shredded chicken (from How to Poach a Chicken), or you are getting a jump on the week by shredding some on a Sunday and are trying to figure out what to do with it. The options are endless.
The first thing that always comes to my mind is tacos. It’s really just so simple. Add your favorite taco seasoning to the chicken, warm it up and make a taco bar with your favorite fixings! You can always make enchiladas, nachos or a taco salad if you want to stick with the Mexican theme but mix it up a bit.
Another route to go is stuffed shells. Add the chicken to some ricotta cheese, freshly chopped parsley and garlic. Mix well and stuff in the already cooked shells. Pour your favorite marinara sauce on top, sprinkle some mozzarella cheese and pop in a 350 degree oven until the cheese melts, about 20 minutes.
I always like to keep some shredded chicken in the freezer (yes..it freezes very well) for when I need chicken noodle soup in a pinch. Just defrost the chicken, boil some chicken broth, add your favorite noodles, vegetables and chicken and you’re done! It really is just that simple!!
Make sure you have the well stocked pantry in order to pull it off.

Great ideas! I keep shredded chicken in the freezer to use for quick BBQ chicken sandwiches or nachos. I’ll have to try the stuffed shells; sounds yummy!
