Parsley Spaghetti is a dish I had quite a bit as a kid and only remembered it a few years ago. It’s a great side dish that goes with just about anything…beef, pork, or chicken!

Time Required: Prep Time – 5 min; Cook Time – 15 minutes
1 package of thin spaghetti
1/4 cup olive oil
6-8 garlic cloves, minced
1 cup of parsley, chopped
Salt to taste
1 tsp. crushed red pepper flakes, optional
Preparing Parsley Spaghetti:
Cook spaghetti according to directions in large pot of salted water. Drain. Pour the oil into the same pot and add garlic. Heat on medium-high until the garlic starts to sizzle, about 1 minute. Add parsley (and crushed red pepper, if desired) and cook for 30 sec. Add the spaghetti and toss to coat. Salt to taste. Serve!
Put as much or as little garlic in as it suits your tastes. The crushed red pepper obviously gives it a little kick. I don’t put it in when I serve it to kids, but it does add a nice flavor.
When there are leftovers, I will often put them in my kids’ lunches the next day. It heats up well!
