Eggplant Ratatouille

I made this as a side dish to chicken parmigiana for some friends and really enjoyed it. I don't know if this is what this little dish I made up should be called but since I'm not a trained French chef, I don't really care

Ingredients
  1. 1 large eggplant
  2. 1/2 cup sharp cheddar cheese, shredded
  3. 1 cup mozzarella cheese, shredded
  4. 1 cup marinara
  5. salt and pepper
  6. olive oil
Instructions
  1. Slice the eggplant into 1/2 inch thick rounds and then cube. Toss with olive oil and salt and pepper. Place about 1/2 of the eggplant into your baking dish. Top with 1/2 the marinara, 1/2 the cheddar and 1/2 the mozzarella cheese. Add remaining eggplant and then top with remaining marinara and cheeses.
  2. Bake at 350 degrees for about 1 hour or until desired level of tenderness.
