Cauliflower is a vegetable most of us just walk by in our grocery store. Maybe it is because it is white. Maybe it is because you remember having it as a kid in an bland, over-boiled vegetable medley at school. Well, give it another try. It is loaded in Vitamin C, K and Folate. It is cheap. It is super easy to make and make taste good. Roasted cauliflower with lemon and parmesan is a great way to make it taste its best.

1 head of Cauliflower
Juice of 2 lemons
1/4 cup freshly grated parmesan cheese
salt and pepper
Making Roasted Cauliflower with Lemon and Parmesan:
Preheat the oven to 450 degrees. Break up the head of cauliflower into the individual florets. Add to a roasting dish. Sprinkle with salt and pepper and olive oil and toss to coat. Add juice of the lemons on top.
Place in oven for about 15 minutes. Give it a stir then add the parmesan cheese. Cook about another 10-15 minutes. Serve.
